Gluten, Dairy and Soy Free Snickerdoodle Blondie Bars


Whew! That recipe name is a bit of a mouth full, isn't it? These were a tasty treat, though. One I think you'll enjoy.

Ingredients:
2 2/3 Cup GF Flour Blend {I used Bob's Red Mill}
2 tsp. Baking Powder
1 tsp. Cinnamon
1 tsp. Xanthan Gum
1/2 tsp. {freshly ground} Nutmeg
1 tsp. Salt
2 Cups Brown Sugar
1 Cup Earth Balance
2 Eggs
1 Tbsp. Vanilla
2 Tbsp. Granulated Sugar and 2 Tbsp. Cinnamon, combined {to sprinkle over the top of the batter}

Directions:
Combine the flour, baking powder, cinnamon, xanthan gum, nutmeg and salt. Set aside.
Using a hand mixer {or your stand mixer}, cream the Earth Balance a bit before adding the brown sugar. Blend the brown sugar and Earth Balance well.
Beat in the eggs, one at a time, then add the vanilla and blend once more.
Slowly add in the flour mixture, blending on low speed to keep from making a mess.
Spread the batter into a greased {I used Spectrum Organic Shortening} 9x13 pan, sprinkle sugar and cinnamon mixture over the top, and bake at 350 degrees for 25-30 minutes.
When the bars are done, they'll be lightly springy near the center when touched.
Allow the bars to cool before removing from the pan.

  1. Hi! I am making my Grandma a gluten free dessert and had some snickerdoodle bars a while back that were delicious and soft that I thought she would like. I came across this recipe and would like to try it and I am not a gluten-free baker/cooker! Can you tell me where to get xantham gum and what is earth balance? Sorry for the dumb questions :) thanks!

    1. Good morning! First--there are NO stupid questions. I'm glad you're here to ask, and I love that you're making something for your grandma :)

      Xanthan gum is pricey, and as you read in the recipe, you use such a small amount. It's most easily purchased through bulk bins for once-in-a-while use {like your scenario}, so check your local grocery stores for the option to buy in bulk. Health food stores might also have some. Another idea is to check with your grandma! She'll probably have a package on hand and could give you a small amount to use.

      Earth Balance is simply my replacement for butter, because I am also dairy and soy free. If your grandma is only gluten free, conventional butter is probably just fine. Make sure it's 100% butter, or even consult the internet to read up on the gluten-free status of the brand you've already got in your fridge.
